We Know Hua Hin

Become a Temaki master with fish enthusiast Takuya Ogura, from Gyotak - The Artisan Fishmonger.

This 2½ hour hands-on masterclass is a collaboration between Feast Thailand, Gyotak, with their expertise in handling fresh and frozen fish and Village Vittles, the ultimate specialty grocer, with their knowledge of locally-sourced produce.

What is Temaki?

Like Sashimi, both Temaki and Maki are delectable expressions of Sushi, though this time wrapped inside the crisp embrace of Nori. They are distinguished by their form and the hands that shape them. Maki finds its elegance in the precision of a bamboo mat, rolling into a uniform log ready to be sliced. Temaki, on the other hand, is a more personal creation, where your palms guide the ingredients into a conical work of edible art. It's this hands-on tradition of Temaki that we'll be honing, allowing you to savour the joy of crafting and consuming your very own Sushi masterpiece.

Uncompromising Expertise
Seize the opportunity to delve into the delectable world of Sushi with passionate fish enthusiast, Takuya Ogura of Gyotak - The Artisan Fishmonger. Takuya champions the art of Temaki and Sashimi, using locally-sourced ingredients that not only tantalise your taste buds, but also support sustainable practices. You'll also gain an insight into Village Vittles, a community-driven program dedicated to nurturing local produce and fortifying the bond between nature's bounty and our culinary heritage.

Precision Slicing
Sashimi means 'cut body' in Japanese. Explore the intricate world of sashimi, where the term itself transcends a mere culinary definition to embody a craft honed over years of disciplined practice. The seemingly simple slices of sashimi are a testament to a chef's precision and understanding that different fish require distinct techniques to enhance their unique texture and flavour. This complexity is at the core of sashimi, a dish where meticulousness in selection and cutting merge to celebrate the freshest ingredients, offering an authentic glimpse into this esteemed culinary art of Japan. Join us and savour the opportunity to discern how the subtleties of a cut can elevate your sensory experience to new heights.

Cultural Significance
Invented in the 8th century, Sushi is a culinary gem deeply ingrained in the culture and traditions of Japan. It represents more than just a meal; it is a symbol of a nation's soul and its unwavering commitment to excellence. With a myriad of preparations, styles and serving methods, sushi has captivated taste buds worldwide, transforming into a global phenomenon that transcends borders. It is a dish that offers an experience of pure, natural beauty. The emotional fulfilment and vivacity that sushi brings are unparalleled, with its visual allure, impeccable presentation and rich textures holding as much significance as its flavour. Embodied within each piece of sushi is a narrative of history, a dedication to traditional techniques and a spirit of modern innovation — all harmonising to define sushi as not just food, but a transcendent piece of art that continues to evolve and inspire.

Respect The Fish
Having the proper respect for the produce used is paramount when talking sashimi. Gyotak - The Artisan Fishmonger unveils the finest selection of sashimi-grade Thai seafood. Each delicately harvested catch comes with a promise of excellence and is certified to be free of bacteria, ensuring that your sashimi experience is not only sublime, but also safe. With this experience, you'll gain a profound understanding of the pivotal role that impeccable quality fish plays in crafting authentic sashimi and temaki. Moreover, we'll guide you through the essential techniques of fish thawing, safeguarding the superb quality and exquisite taste that only the freshest seafood can provide.

Japanese Rice
Perfecting the art of cooking Japanese rice is an essential skill for any culinary enthusiast, serving as the cornerstone for exquisite temaki creations. It's not merely about boiling grains; it's a meticulous process that, when done correctly, results in irresistibly fluffy and subtly sticky rice that forms the perfect canvas for temaki. Alongside this, the preparation of sushi vinegar and its careful integration with the rice is an art in itself, one that imbues the rice with a harmonious balance of sweetness and tanginess, essential for that authentic flavour profile. This nuanced technique is the heartbeat of traditional Japanese Sushi, ensuring every bite carries the essence of centuries-old culinary wisdom.
